Perfect oven-baked vegetables

This colourful, flavourful casserole of baked vegetables is equally perfect as a side dish or a main meal in its own right.

Perfect oven-baked vegetables


  • 1 kg potatoes
  • 1 red bell pepper
  • 150 g celeriac
  • 2 carrots
  • 1 zucchini
  • 1 onion
  • 1 fennel bulb
  • 1 tbsp Vegeta Twist Crispy Potato Seasoning
  • 5 tbsp olive oil


  1. Chop the vegetables, toss with the Vegeta Twist and arrange into a large casserole or baking dish.
  2. Drizzle the olive oil on top of the tossed vegetables and bake at 200°C for about 50 minutes.
  3. Serve as a meal in itself or as a side dish to roast meat.

Serving: Serve warm as a full meal or with a nice roast.

Chef's tip: When using vegetables with high water content, such as zucchini, wait until 15 minutes before the end of baking time to sprinkle with Vegeta Twist and add to the other vegetables.
