Kofta with couscous

You can’t beat the taste of hot, mildly spiced kofta fresh off the grill. And with a bed of fluffy coucous and a medley of colourful vegetables, you’ve got yourself a fantastic meal in under an hour.

Kofta with couscous


  • 700 g ground beef
  • 80 g chopped onion
  • 1 bunch parsley, chopped
  • ½ tsp ground coriander
  • ¼ tsp cayenne pepper
  • 1 tbsp Vegeta all-purpose seasoning
  • 200 g couscous
  • 50 ml olive oil
  • 50 g pine nuts
  • 100 g sliced onion
  • 150 g sliced red peppers
  • 150 g sliced green peppers
  • 1 lemon
  • 1 bunch coriander, chopped
  • salt
  • ¼ tsp ground pepper
  • 1 tbsp Vegeta all-purpose seasoning


  1. Add your onion, parsley, cayenne pepper and Vegeta to the ground beef meat and mix well. Shape about 26 balls.
  2. Spear onto a skewer and grill for around 15 minutes.
  3. Meanwhile, add Vegeta to 500ml water and bring to the boil. Add couscous, stir, cover, then remove from heat and leave for about 5 minutes. Fluff with a fork and add toasted pine nuts.
  4. In heated oil, fry your onions and peppers then stir into the couscous.
  5. Add lemon juice and teaspoon of grated lemon zest, coriander, pepper and stir.

Chef's tip: Couscous may also be used as a rice replacement as it contains fewer calories.
