Sunshine bites

For the Pasta

  • 270 g strong flour
  • 130 g butter
  • ½ tsp salt
  • 2 tbsp sour cream

For the Filling

  • 2 tuna fillets in vegetable oil (approx. 115 g each)
  • 3 spring onions
  • 1 egg
  • 80 g Emmental cheese
  • 1 tsp Vegeta All-Purpose Seasoning
  • 200 ml whipped cream
  • 30 g grated Parmesan cheese

  1. For the Pasta
  2. Sieve the flour and cut the cold butter into chunks, then blend with an electric mixer.
  3. When the mixture comes together into a crumbly, lumpy mixture, add the salt and sour cream and mix until the dough is smooth. If necessary, finish the dough with your hands.
  4. Place the prepared dough onto a floured surface and roll it out thinly. Use a 9-cm round cutter to cut out 24 dough circles.
  5. Take 2 muffin trays and place one circle into each muffin cup, pushing it down gently.
  6. For the Filling
  7. Clean, wash and shred the spring onions into thin slices and mix with the tuna and grated Emmental cheese. Place a little of the mixture into each of the muffin moulds.
  8. Beat the eggs, mix in the sour cream and Vegeta, and spread the mixture over the filling with a spoon.
  9. Sprinkle with grated Parmesan cheese.
  10. Place the muffin trays into a preheated oven at 200°C and bake for 25 minutes.
  11. Serve as appetisers or finger food.

Serving: Serve the meal as an appetizer or a finger food.

Chef's tip: You can replace the spring onions with leeks or asparagus if you prefer.
